Shin Katsu Opens in Tanjong Pagar - Premium Tonkatsu with Mille-Feuille Katsu and Charcoal-Grilled Rice
Source: Shin Katsu
If you’re a fan of crispy, juicy pork cutlets, there’s a new spot in Tanjong Pagar you’ll want to check out — Shin Katsu, now officially open and helmed by Chef Masato Matsubayashi, former Head Chef of Ma Maison and a tonkatsu specialist with over 15 years of experience under his belt. “Tonkatsu may appear simple, but it demands balance, precision and technique,” shares Chef Masato. Look forward to an authentic tonkatsu experience pairing premium ingredients with refined technique and a deep respect for Japanese tradition.
Star of the Menu: Mangalica Pork — aka the Kobe Beef of Pork
Mangalica Hungarian Rosu Katsu Set
Shin Katsu prides itself in serving Hungarian Mangalica pork, known for its buttery marbling and melt-in-your-mouth richness. It is served in limited quantities daily, so come early for have a bite of this prized pork.
You will also find U.S. Kurobuta on the menu — tender, juicy and flavour-packed — available in both Rosu (loin) and Hire (tenderloin) cuts.
Other Menu Highlights
The menu at Shin Katsu goes beyond the basics with a curated selection of premium tonkatsu dishes. Enjoy the Mangalica Hungarian Rosu Katsu Set ($42.80), a rare treat made with buttery, marbled pork. The U.S. Kurobuta Rosu ($35.80) and Kurobuta Hire Katsu Set ($36.80) are also standout options, offering rich flavour and tender texture.
For something more indulgent, the Mille-Feuille Katsu Set ($37.80) features delicately layered pork slices, available in classic, cheese, or black truffle variations. We thoroughly enjoyed the aromatic truffle version, which perfectly complemented the delicate and juicy katsu.

The Shin Katsu Combo Set ($34.80) is ideal for those who want variety, serving up a trio of prawn, Canadian Rosu, and Hire cutlets on one plate.

If you are not in the mood for pork, Shin Katsu has you covered with alternatives like Ebi Fry Set ($33.80), Chicken Katsu Set (from $21.80), and comforting Japanese-style Katsu Curry sets.
Every tonkatsu set at Shin Katsu comes with thoughtful accompaniments. Enjoy a bowl of charcoal-grilled rice, which adds a gentle smoky aroma to the meal. The set also includes refillable rich miso soup, freshly shredded cabbage, and house-made pickles to balance the flavours and cleanse the palate.
Last but not least, check out their delightful kushi katsu such as Chicken Thigh ($3.80 for 1 pc), as well as appetisers like Boneless Chicken Wing ($3.80 for 3 pcs) and Potato Salad ($6.30).
What Makes Shin Katsu Different?
While many tonkatsu restaurants stick to the basics, Shin Katsu sets itself apart with a technique-driven approach. The pork is dry-aged and sliced with precision to bring out its natural flavour and texture. A custom panko breading blend is used to create a light yet ultra-crispy coating without feeling greasy.
Chef Masato’s signature frying method ensures each cutlet is juicy on the inside and crisp on the outside. Finally, the charcoal-grilled rice offers a distinct earthy dimension that is rarely seen in typical tonkatsu sets — a thoughtful detail that reflects the restaurant’s dedication to craft. The name itself — Shin (心: heart, 新: new, 真: real) and Katsu (カツ), encapsulates the concept’s dedication to sincerity, innovation and authenticity.
Final Thoughts
If you love tonkatsu, Shin Katsu is worth a visit. Chef Masato is doing what few in Singapore are — going all-in on a single dish, and executing it with great attention to detail. From the ingredients to the plating, this place feels less like a casual bite and more like a tonkatsu masterclass.
