Yatsushiro’s fertile plains produce some of Japan’s most celebrated citrus and fruit, prized for their natural sweetness, aroma, and vibrant flavour. The Banpeiyu Citrus Paste “Maxito” is a luxurious creation made from the whole fruit—peel, pith, and flesh, and can be enjoyed in desserts, yogurt, juices, or cocktails. The Yatsushiro Specialty Banpeiyu Citrus is an impressively large fruit that delights with its aroma, flavour, and even its thick peel, which can be candied as a sweet treat. For a concentrated burst of citrus, the Shiranui Dried Fruits capture the natural sweetness and fragrance of high-quality Shiranui citrus in every bite.

Crafted with care and locally sourced ingredients, these condiments and seasonings bring Yatsushiro’s authentic flavours straight to your kitchen, enhancing a variety of dishes with aroma, heat, and depth.
The Hidden Village Yuzu Kosho series includes green, red, and yellow varieties, combining the refreshing fragrance of yuzu with the bold punch of chilli peppers. These versatile pastes can be used as condiments, seasonings, or hidden flavour enhancers in soups, grilled meats, dumplings, and more.
At the fair, only the green and yellow varieties are available for purchase.
The Chili Garlic Pastes—Green, Red, and Golden—feature rare jumbo garlic and locally grown chilli, offering a balance of heat, aroma, and umami. Perfect for hot pots, Japanese cuisine, or even Western-style dishes, these additive-free pastes elevate everyday cooking.
At the fair, only the red variety is available for purchase.
Yatsushiro’s Yuzu Spice Powders—including the Yuzu Chilli Powder, Yuzu Seven Spice Blend, and Extra Spicy Yuzu Chili Powder—infuse dishes with citrus aroma and bold heat. Sprinkle on noodles, dipping sauces, meat, or vegetables to enjoy a quick and flavourful taste transformation.

Fresh options include Hachibee Tomato, Kumamoto Salt Tomato, and Hachibee Mini Tomato, all carefully cultivated to deliver naturally concentrated sweetness and umami.
Processed tomato products such as Hachibee Dried Tomato and JA Yatsushiro Hachibee Tomato Dressing with Ginger are crafted to maximise flavour. Made with 100% locally grown tomatoes, these products enrich soups, pasta, dressings, and other dishes with natural depth and colour.

Ginger Powder, Ginger Noodles, Ginger Jam and JA Yatsushiro Hachibee Tomato Dressing with Ginger all highlight ginger’s unique flavour. These versatile ingredients bring freshness and a zesty kick to meals, from noodles and soups to sauces and spreads.

The lineup includes citrus highlights such as Banpeiyu Citrus Paste “Maxito” and whole Yatsushiro Specialty Banpeiyu Citrus, popular condiments like Hidden Village Yuzu Kosho, chili garlic paste, and yuzu chili powder, as well as fresh and processed tomato products including Hachibee tomatoes, Kumamoto salt tomatoes, and tomato dressing with ginger. Dried fruits, kikurage mushroom products, traditional treats like Ikinari Dango and roasted sweet potato, along with granola, ginger noodles, ginger jam, and Pafuko snacks are also available.
In addition, you can find a variety of limited-time dishes feature Yatsushiro’s local ingredients in easy-to-enjoy, everyday-style preparations at the fair. Highlights include the Chilled Ginger Noodles with Tempura, offering refreshing ginger-infused noodles with crisp tempura; the Sea Bream Carpaccio, enhanced with aromatic yellow yuzu kosho; and the Teriyaki Chicken with Spicy Mayo, brightened with a hint of yuzu kosho. (3) Arc-en-ciel Pâtisserie
Event Period: 4 Feb - 1 Mar 2026
Located in Chinatown, Arc-en-ciel Pâtisserie will present a limited-edition original parfait, “INES”, specially created for the Yatsushiro Food Fair. This visually striking dessert features Yatsushiro’s specialty Banpeiyu citrus and ginger, combining bright citrus notes with gentle warmth for a refined and photogenic treat.

Event Period: 2 - 15 Feb 2026
At kemuri, kappo-style izakaya in Cuppage Plaza, a Kumamoto-born chef will present two exclusive dishes that showcase Yatsushiro’s ingredients through refined Japanese and Western-inspired techniques.
The first dish is Crispy Tilefish with Scales in a Pescatore-style Kumamoto Tomato Sauce, made using tomato paste, ginger paste, salt tomatoes, chilli garlic, and yuzu pepper for a bold yet balanced flavour profile. The second offering is Charcoal-Grilled Kumamoto Wagyu Sirloin, served with a refreshing Banpeiyu Citrus Vinaigrette accented by dried tomatoes, highlighting the citrusy brightness of Yatsushiro produce.
(5) Zenryoku Izakaya
Event Period: 3 - 14 Feb 2026
Located along Upper Thomson Rd, Zenryoku Izakaya offers a special appetiser featuring fresh conger eel (hamo), and yuzu kosho, offering diners a chance to enjoy seasonal Japanese flavours elevated by Kumamoto ingredients.
(6) Torikin
Event Period: 2 - 15 Feb 2026
At Torikin at UE Square, the spotlight is on its signature Hakata Mizutaki, a traditional Japanese hot pot that’s both comforting and flavorful. For the Yatsushiro Food Fair, it is served with three types of yuzu kosho—green, red, and yellow, adding a vibrant, citrusy kick to the rich, savoury broth. Diners can also enjoy Homemade Tofu & Salt Tomato Caprese, featuring the natural sweetness of fresh salt tomatoes.
