Toku Nori Celebrates SG60 with Local-Inspired Bites & Bold New Menu

From a fiery sambal handroll to mochi mango parfait, Toku Nori’s August menu is a flavour-packed tribute to Singapore’s Diamond Jubilee. In honour of Singapore’s 60th birthday, modern Japanese handroll bar Toku Nori is serving up a month-long celebration of flavours at its Telok Ayer flagship store. Expect not just limited-time SG60 specials (available till 31 August), but also a new lineup of Japanese creations, now officially part of the regular menu.
SG60 Specials: Local Flavours, Handroll Style (1–31 August Only)
Toku Nori’s culinary team pays tribute to the flavours Singaporeans know and love – sambal, curry, mango sago with a creative Japanese twist. These special items are only here for August, so catch them while you can.
Inspired by sambal stingray, this fiery Sambal Sawara Handroll ($12++) features grilled Spanish mackerel coated in housemade sambal belachan. Wrapped with sushi rice and crispy nori, we certainly enjoyed the smoky heat and crunch.
Curry Karē Croquette (Vegetarian) ($6++) is a scrumptious appetiser served with a rich, Singapore-style curry sauce.
The refreshing Jubilee Julep Cocktail ($18++) is perfect to quench your thirst amidst the recent sweltering weather. It is made from sugarcane juice, sour plum, mint, and vodka for a bright, zesty, sip.
A whimsical rework of the mango sago dessert, Mochi Mango Sago Parfait ($10++) is layered with mango sherbet, coconut daifuku, sago, mango pudding, and kuromitsu syrup. Creamy, chewy, and full of nostalgic joy.
New Menu Highlights
From fresh seafood tartare to indulgent cheesy mochi, Toku Nori’s latest creations continue its signature formula: Japanese foundations, local inspirations, and inventive textures that pop.
Hotate Tartare ($18) features raw Hokkaido scallops gently cured in kombu, tossed in herb oil and lime, then topped with burnt mandarin and ponzu pearls. Scoop it up with crispy ebi senbei prawn crackers for a refreshing burst of citrus and umami.
Cheese Imo-Mochi ($14) is a potato mochi stuffed with gooey cheese and topped with caramelised onions. Sweet, salty, and comforting.
Salmon Poke Poppers ($16) is Toku Nori’s punchy take on poke: diced salmon, kimchi, avocado, cucumber, and tobiko in a crisp nori taco shell.
Looking for something refreshing or vegetarian-friendly? The Shiori Garden Salad ($14) is a vibrant mix of romaine lettuce, radish, pomegranate seeds, cherry tomatoes, and savoury kombu – light, crunchy, and beautifully balanced. King Oyster Mushroom Fries ($12) is a vegetarian bar snack, deep-fried king oyster mushrooms dusted with bonito flakes, served with a rich truffle-kombu mayo.
Launching end August – Aburi Chirashi Don is a premium chirashi bowl featuring torched sashimi over seasoned rice, with all the luxe toppings you could want.
Spicy, chewy, creamy, crunchy—this SG60 lineup checks all the right boxes. Whether you're team sambal or mochi, this is one Jubilee feast worth rolling up for.
