Pizza Studio Tamaki: Famous Tokyo-Neapolitan Pizza Arrives in Singapore
Tokyo’s beloved pizzeria, Pizza Studio Tamaki (PST), is finally making its long-awaited debut in Singapore. Come 10 June 2025, fans of finely crafted pizza can look forward to indulging in the distinctive Tokyo Neapolitan-style pizzas that have earned PST a spot in the Michelin Guide Japan and the Top 100 Pizzas in the World list.
Located at 38 Tanjong Pagar Road, PST Singapore will offer the same signature recipes and culinary philosophy that founder Tsubasa Tamaki has championed since launching his first outlet in Tokyo’s Roppongi district in 2017.
A New Standard for Pizza in Singapore
Tamaki is widely recognised as the pioneer of Tokyo Neapolitan-style pizza — a refined twist on the classic Italian recipe, crafted for the Japanese palate. PST’s signature dough is made from a unique blend of Canadian and American wheat flour, exclusively milled in Japan, and aged for over 30 hours to achieve a light, chewy texture with a crispy charred crust. The result is a pizza that is both rustic and elegant, with deep, complex flavours and a natural smokiness from the wood-fired Stefano Ferrara Forni oven.
To maintain authenticity, key ingredients are flown in from Japan, including Okinawan salt, Aomori garlic, and specialty cheeses. Even the air-dried chilli padi used in Singapore is a thoughtful local nod to the Calabrian chilli used in Japan.
Leading the Kitchen: Ryosuke Tanahara
Helming the Singapore outlet is Chef Ryosuke Tanahara, who trained under Tamaki for nearly three years. With a deep respect for his mentor’s exacting standards, Tanahara brings with him the same obsession for detail—from the dough’s hydration levels and oven temperature to the precise aging of ingredients—ensuring that every pizza delivered in Singapore mirrors the quality of its Tokyo counterpart.
Menu Highlights
Tomato Base Pizza
Tamaki ($29) – The pizzeria’s signature pizza with sweet Italian datterini tomatoes, Japanese smoked mozzarella, pecorino romano, and basil. It is recommended to smash the juicy mini tomatoes before digging in. We loved how the tomato juice intensified the subtle balance of sweet and salty flavours on our palate.
Arrabbiata ($30) – A spicy crowd-pleaser with house-made pork nduja, mozzarella, Aomori garlic, and house-crafted chilli flakes, made extra special for Singapore with added cheese. The spicy kick would certainly appeal to the local diners who would like a twist on regular tomato base pizza.
Cheese Base Pizza
Bismarck ($32) – A savoury mix of mushrooms, pecorino romano, mozzarella, house made pork sausage and topped with a luscious Hinata egg. This is another unique pizza with the addition of an raw egg cracked directly onto the pizza in the final minutes of baking. The soft, runny yolk added a rich, creamy flavour and texture to the pizza.
5 Formaggi ($34) – A rich blend of smoked mozzarella, gorgonzola, taleggio, grana padano, and mascarpone, finished with a drizzle of acacia honey. This would be the top pick for cheese lovers like us. PST’s rendition of this classic Italian pizza with the acacia honey drizzle makes the cherry on the cake. The combination of cheeses boasts a rich, creamy and slightly tangy flavour, while the honey adds a sweet and subtle floral note, leaving our taste buds craving for more.
Appetisers
Pair your pizza with thoughtfully curated salads and appetisers, from chilled, refreshing bites to warm and hearty classics.
Warm and satisfying, the Meatballs in Tomato Sauce ($18) are simmered in a rich, tangy tomato base that delivers comfort with every bite. It is a rustic Italian classic ideal for sharing or enjoying solo with a slice of pizza on the side.
For something unexpected yet deeply flavourful, try the Caramelised Marinated Pumpkin in Red Wine Vinegar ($16). Lightly caramelised to bring out its natural sweetness, the pumpkin is then marinated for depth and finished with an acidity that cuts through the richness.
Can’t decide? Indulge in the Omakase Appetiser ($18 per person) for a chef-curated tasting that captures the best of both worlds.
Dessert
End your meal on a classic note with the House-made Tiramisu ($14) – a timeless Italian dessert layered with espresso-soaked ladyfingers, rich mascarpone cream, and a dusting of cocoa powder. Light yet indulgent, it was the perfect finish to our hearty meal.
For a lighter finish, opt for the classic Panna Cotta with Raspberry Sauce ($13) – silky, gently set cream with a delicate wobble, and topped with a bright raspberry coulis.
