A Taste of Hokuriku: Limited-Time Gourmet Fair at Tommy’s Sake Bar
Located in the heart of Tanjong Pagar, Tommy’s Sake Bar is bringing the flavours of Hokuriku — the coastal region comprising Fukui, Ishikawa, and Toyama — to Singapore. From 18 to 29 November 2025, the restaurant is hosting the Hokuriku Gourmet Fair featuring regional seafood and seasonal specialties. Produced by the Niigata-based Tomizushi group, Tommy’s Sake Bar is a refined sushi destination that offers fresh, seasonal sushi and sashimi paired with a curated sake collection, creating a sophisticated experience for both casual diners and seasoned connoisseurs.
The exclusive menu showcases rare regional ingredients such as Seiko crab, hotaru ika (firefly squid), amaebi (sweet shrimp), sourced directly from Hokuriku. For those seeking a luxurious lunch with your work buddy, an indulgent dinner, or a rare culinary journey through Japan, this is a menu not to miss.

Hokuriku Nigiri Sushi 5 pcs
The Hokuriku Nigiri Sushi 5pcs ($21) is a premium assortment featuring octopus tataki, sweet shrimp, yellowtail, squid, and a firefly squid gunkan. Each piece highlights the delicate flavours of seafood sourced from the region, making it a must-try for sushi lovers.
Goro Yaki (grilled squid with liver)
Goro Yaki ($12) is a rustic, umami-rich specialty featuring grilled squid and liver. Popular from Hokkaido to Tohoku, this dish delivers deep, savoury flavours that pair beautifully with sake.
Seikogani Crab
Another standout is the Seikogani Crab ($30), a seasonal delicacy from Fukui. Sweet crab meat served in its shell, complemented by rich crab miso, offers a luxurious winter treat that showcases the famed Echizen crab in all its glory.
Yukimi Nabe (beancurd hotpot)
Other offerings include Echizen Ama Ebi (sweet shrimp) Sashimi ($15), Tako (octopus) Carpaccio with Wafu Uni (sea urchin) sauce ($18), Konbu udon with thin sliced Kelp ($15), Ika Somen ($10), Yukimi Nabe (beancurd hotpot) ($15), and several other regional favourites — each crafted to bring the authentic taste of Hokuriku to Singapore.
